Grady started as a Chef at the five star Hyde Park Hotel as an apprentice Chef. He worked there for 3 years under the watchful eyes of Jean Michel Bonin & Jerome Dutois who mentored him."I still feel their presence every day" says Grady.Then he went on to work in Boston, Hong Kong, Sicily, Paris & Los Angeles before setting in Cardiff in 2006.Grady has been at Le Gallois since June 2008.Grady's style of cuisine is French in 'technique' with influences from his travels.Seasonal produce drives the menu composition.

Elen and Francis have been fronting Le Gallois since the very first day back in May 1998.They have, during this period, witnessed a great expansion of the restaurant industry in Cardiff and have managed to stay in business by keeping a very high standard in both sectors food and service.Elen and Francis said thanks to the arrival of Grady Atkins (Head Chef) we are now in a position to acheive greater things. The future certainly looks promising and exciting.
